Bäckerei Oberprantacher bakery

This bakery is renowned for its schüttelbrot, which is particularly tasty and rich in precious natural ingredients. The wheat for this hand-shaken crispbread grows at the foot of Alpe di Siusi/Seiser Alm in South Tyrol, above the village of Siusi/Seis. It is then ground at the historic watermill in Fursch to make wholegrain flour. The thin schüttelbrot is a traditional South Tyrolean farmers’ bread. Since it dries quickly, it is less perishable than regular bread. The schüttelbrot is the perfect accompaniment for speck and kaminwurzen, but tastes great also with cream cheese or quark spreads refined with herbs.
