Producer Metzgerei Silbernagl butchery of the Senoner Brothers | The Silbernagl butchery in Castelrotto/Kastelruth has one simple motto: "Less is more." Less preservatives, more care in the sourcing of the meat. The beef comes mainly from local farms, from the Alpe di Siusi/Seiser Alm surroundings and other South Tyrolean areas. Pork comes from select areas in South Tyrol and mostly from premium companies in Austria and Germany. The Senoner brothers have already succeeded in convincing several local farmers into pig farming, in the hope of increasing local pork production in the future. |
