The guiding principle of the Silbernagl butcher shop in Kastelruth is: "Less is more." Fewer preservatives, more care in sourcing the meat. The beef comes mostly from farmers in Kastelruth, from the area around the Alpe di Siusi and from other South Tyrolean regions. The pork comes in small part from South Tyrol and mostly from quality farms in Austria and Germany. The Senoner brothers have already succeeded in convincing several local farmers to raise pigs and they hope that in the future there will be more pigs from small farms again.
