Weinsepphof was built in 1980 and named after the Winesap apple variety that grew on the grounds. In 2019, Josef Holzner took over the farm as the third generation. The farm grows red-fleshed apples – a variety that's difficult to market. Josef started experimenting: first naturally cloudy apple juice, then the idea of an alcohol-free aperitif inspired by Italian aperitivo culture. The result was Sparkling Rocco – sparkling, dry, fruity, without artificial additives. In February 2023, Florian Lair joined. Together they bring Sparkling Rocco to a broader audience – produced in South Tyrol, with apples from the region.
