Perhaps it is a rediscovery; in any case, a passion, because the nature-oriented production is close to the heart of the Traminer farming family Giovanett. An old corn variety is grown at Römerhof, which was known as "Tirggplent" in the South Tyrolean lowlands until 50 years ago. The typically orange-red corn kernels are ground into various gluten-free cornmeal types in the farm's own stone mill after several traditional work steps ("oklaubn", "tschilln", "aufhängn", "omochn").
