Ebnerhof Winery is located above Atzwang on the sunny Ritten plateau, with views of the Schlern massif. Brigitte and Florian Unterthiner run the winery in the third generation. The vines grow on terraced slopes of volcanic origin. The red varieties thrive on the south-facing slopes, the whites on the cooler east-facing sites. The mineral-rich soils give the wines their characteristic taste. Many of the vines are over 40 years old – their deep roots supply the grapes even during dry summers. In the vineyard, the family works by hand: pruning, thinning, leaf removal. Yields are deliberately kept low. When to harvest is decided by Brigitte and Florian by tasting the grapes.
