Organic Kimchi with White Cabbage

Kimchi made in South Tyrol. We’ve reimagined this Korean classic made from fermented vegetables in the South Tyrolean style, using ingredients sourced from our region.

Our classic kimchi is characterized by its perfect balance of lingering, fresh acidity and natural sweetness. The fermentation of the finest Italian organic ingredients and select spices makes our Kobas white cabbage kimchi a true all-rounder.

Our organic vegetables and fruits come from farmers in the Vinschgau Valley in South Tyrol. Together with their families, they grow white cabbage, red cabbage, savoy cabbage, carrots, apples, pears, and onions for our kimchi.
Our production facility in the Vinschgau Valley ferments the kimchi according to our own original recipe.
Every jar of Kobas contains the fruit of our labor, the rich soil, and the warm sunshine of the southern slopes of the Alps.
