For their mountain pasta, the Malfertheiner family uses exclusively ingredients from their own Obermalid farm in Kastelruth, carefully processing them step by step with great attention to detail.

The grain grows in the fields of their farm and is milled in their own mill into whole spelt flour. Free-range chickens provide fresh eggs.
